İlginiz için teşekkür ederim.&lt;br /&gt;&lt;br /&gt;&lt;ul&gt;&lt;li&gt;Kabartma tozunun etkisini gösterebilmesi için sıvıdan önce unla birlikte karıştırılıp sonra sıvı malzemelere eklenir. &lt;/li&gt;&lt;li&gt;Undan randıman alınması için elenerek kullanılmalı, elek yoksa havalandırmalıdır.&lt;/li&gt;&lt;li&gt;Hamur işlerinde ele yapışmayan hamur, her zaman ideal hamurdur. Aldığı kadar un denilen yerlerde göz kararınızı kullanarak bu kıvamı tutturabilirsiniz.&lt;/li&gt;&lt;li&gt;Pastalarda hamurun kıvamı koyu boza kıvamı olmalıdır.&lt;/li&gt;&lt;li&gt;Keklerin piştiğini anlamak için, kürdan veya bıçak batırılır. Yapışmıyorsa pişmiş demektir.&lt;/li&gt;&lt;li&gt;Pastalar, önceden ısıtılmamış fırında, 175-180 derece arasında pişirilir.&lt;/li&gt;&lt;li&gt;Mayalı hamurlar, yağlı hamurlar (poğaça türü) önceden ısıtılmış ılık fırında, 200 derecede pişirilir.&lt;/li&gt;&lt;li&gt;Baklagil yemeklerinde tuz, yemek piştikten sonra en son atılır.&lt;/li&gt;&lt;li&gt;Yemeğe kesinlikle soğuk su eklenmemelidir.&lt;/li&gt;&lt;li&gt;Pilav, piştikten sonra karıştırılır. Sonra da ara ara karıştırılarak tane tane olması sağlanır.&lt;/li&gt;&lt;li&gt;Muhallebi yapılırken kısık ateşte sürekli karıştırılmalıdır. Ama patatesli börek sevenler için, 3-4 patates haşlanıp kabukları soyularak püre haline getirilip baharatlandırılabilir.&lt;br /&gt;&lt;br /&gt;Fırın tepsisi güzelce yağlandıktan sonra, yufkalardan biri tepsiye yayılır ve fazla kalan kenarları ayrılır. Yufkalardan 3 tanesi, az önce ayırmış olduğumuz fazla kenar yufkalarıyla birlikte parçalanır, ve geniş kabın içine konarak karıştırılır. Ardından limon ve unlu suyun içinde iç harcı hazırlanana kadar bekletilir.&lt;br /&gt;&lt;br /&gt;Rendelenmiş soğan, pirinç, kıyma, zeytinyağı, maydanoz, karabiber ve tuz karıştırılarak iç harcı hazırlanır. Enginarların ortasına iç harcı yerleştirilir, enginar yapraklarının içi de bu harçla doldurulur. (Midye dolma gibi oluyor)&lt;br /&gt;&lt;br /&gt;Doldurulan enginarlar tencereye yerleştirildikten sonra, enginarların üzerini geçmeyecek kadar sıcak suya salça karıştırılıp kapağı kapatılır. Başka bir kapta un ve kabartma tozu iyice karıştırıldıktan sonra, yoğurt-yağ-yumurtanın olduğu kaba boşaltılır ve karıştırılır. Peynirler rendelenir, dereotu ayıklanır ve karışıma eklenir.&lt;br /&gt;&lt;br /&gt;Hamur karışımının boza kıvamından biraz fazla olması, ele yapışması kıvamının tam olduğunu belli&lt;/span&gt;&lt;span style="font-family:arial;"&gt; edecektir.
